Iron (Wo)man Tacos are a fun source of iron. Again, this is a great recipe for everyone whether you are running an ironman triathlon or an iron-woman trimester. Cooking traditions are started by events that make you pay attention. Truth-be-told, there is not much difference between the way a triathete should eat and a mother-to-be. Iron (Wo)man Turkey Tacos (pictured with a mixed pea saute) 2 lbs ground Turkey 2 cloves garlic, chopped 1 beer (i don't care what kind - for braising liquid only - unless you are the father) 1 tbsp cumin 1 tbsp extra virgin olive oil 1 tbsp oregano, dried or fresh 1 tbsp salt 1 tbsp pepper 2 bay leaves 2 cups water 1 cup basic tomato sauce (*see Big Mikes Tomato Sauce) 1 cup sharp cheddar, shredded 1 carrot, shredded 1 package flour tortillas *Preheat oven to 350 degrees *In a dutch oven, or a deep pot or pan that can go in the oven, add turkey, beer, garlic, cumin, oregano, bay leaves, salt, pepper, olive oil, and 1 cup of water. Bring to boil on stove top then cover and put in the oven for about 30 minutes. The alcohol in the beer will cook off. This is for braising only. *Take turkey out of the braise and put on paper towels to drain. Season with salt and pepper to taste. *On stove top, add 1 cup of tomato sauce and the remaining cup of water and bring to a boil. Let thicken, about 10 minutes. *Add turkey to the sauce. Mix it and allow it to cook together for another 10 minutes over medium heat. *Serve in flour tortilla, add a pinch of cheese and shredded carrot as topping. No traditional taco sauce needed. Iron (Wo)man Taco Fact: One serving of ground turkey and a tortilla represent a high percentage of natural iron and protein. Using turkey instead of beef gives you a lower fat and cholesteral option, and in our opinion just tastes better. Also, using shredding carrot and cheese allow you to sneak in some extra nutrients in the form of a topping. You can incorporate others as well such as; lettuce, cabbage, corn, beans, etc. Stork Fork Tip Using a "braising" method of cooking with the turkey keeps the ground turkey moist and allows it to absorb more flavors. Finishing it in the tomato sauce gives it a robust flavor so you do not need to use other store-bought condiments that you would normally use on a taco. |
