This is a staple building block that can be used for pasta, pizza, soup, egg, etc.  Make this once a week and keep in your fridge so you can use it on the fly.  Use the labeling system (as pictured) so that everyone knows what it is and when it was made (great for keeping parents, grandparents, nannies, et al on the same page).

 

 

TSF Basic Tomato Sauce

*1 35 OZ can of San Marzano Whole Tomatoes (or whatever is available to you), crush with your hands

*3 cloves of garlic, chopped

*1/2 onion, chopped

*2 TBSP extra virgin olive oil

*2 TSP dried Oregano

*Pinch of chili flakes or cracked red pepper

*Salt to taste - approximately 2 TSP


  • In a sauce pan heat the olive oil.  Add the garlic, onion, touch of salt, and chili flakes/red pepper.  Saute until the garlic lightly browns and the onions get translucent aproximately 5 minutes.
  • Add the tomatoes, oregano, and more salt to taste.
  • Bring to a boil for about 2 minutes then reduce the heat to low.  Let simmer for approximately 30 minutes.
  • Transfer to a jar for the fridge.  Will be good for about a week and can be frozen.
  • If you want a smoother texture fr pizza pulse in a food processor prior to putting it in the jar.
