Deconstructing Your Food

We've talked about the Ketchup Diet, we've preached about being proactive with the Fridge Market, and of course, we've harped about organic ingredients. This week we're going to get you to think outside of the box. What is it that your child likes about a particular food and how can you recreate that essence with what you have? No, we're not talking about chicken made into nuggets then put into a box. We're talking about deconstructing pizza, using basic "fridge market" items, and making it into a knock-out creation that will not only capture that essence of pizza but will make it fit your crazy life on the go.

Our 16 month old loves pizza but it doesn't quite travel well in the lunch box.  We've cut it into little pieces and after it is re-heated it just becomes a mess. In times like this you just need the Rollie Pollie. The Rollie Pollie is essentially a mini 'calzone".  It takes the zestiness, the cheesiness, and doughiness of pizza and transforms it into small circles that your child (or spouse) can easily pick up and eat in one bite.  Best of all, if you've followed some of the basic recipes on this site, you can simply assemble it using the recipe for another item - our basic crackers.  

Rollie Pollie (pictured) - File Under - Fun

-TSF Basic Cracker Dough
-Tomato Paste
-Dried Oregano
-Pinch of Salt
-Extra Virgin Olive Oil

  • Preheat oven to 400 degrees
  • Cut a 1/2 inch slice of dough from the ball
  • On a well floured surface roll the dough flat. This dough is very soft and elastic; you will essentially roll it until you can just start to see through the dough
  • On the side closest to you, spread tomato paste evenly on half of the dough lengthwise (pictured)
  • Add oregano and salt
  • As if you were rolling a burrito, fold the sides towards the center and roll the dough all the way up (pictured)
  • Brush outside of roll with olive oil
  • Bake for approximately 10 minutes or until the outside lightly browns
  • Let cool, slice in circles like sushi, serve

-Can be stored in the fridge for about 4 days, can be served cold
